One-Pan Lemon Chicken

This recipe is definitely my go-to dinner when I’m cooking, and if I can do it then anyone can. We all know Charles is the chef in this household and it’s best we leave it that way for the most part. He enjoys it, makes multitasking look easy and everything he makes tastes like heaven. When I find a recipe that requires few dishes, simple ingredients and minimal time… I master it. SO, when I found this one-pan lemon chicken, I was thrilled.

This literally requires one pan and can be made in under 30 minutes. Anyone who works full time, mama’s who have babies or if you live in 2018 and just don’t have time to cook and clean for 2+hrs then you’ll love this easy home cooked meal too! 

Ingredients:

  • 2-3 chicken breasts
  • 2 lemons
  • 3 cups chicken broth
  • 2 cups long grain rice 
  • Seasonings (I use Italian blend, pepper and garlic salt)

Directions:

  • Clean and season chicken
  • Sear chicken (30 seconds each side), then remove from pan
  • Pour in broth and squeeze 1 -2 lemons
  • Bring to simmer then pour in rice and add chicken back in pan
  • Simmer covered for 20 minutes

Tip*  remove lid immediately after 20 minutes and serve or chicken will over cook even if the stove is turned off.
